Pfeffernusse Spice Blend

Pfeffernusse is the complex gingerbread spice celebrated throughout December in Germany and the Netherlands. It combines cinnamon, cloves, allspice, coriander, cardamom, ginger, star anise, mace, and nutmeg into an unforgettable winter spice. A touch of pepper when making scones or other baked treats gives it an extra kick.

Ingredients

  • 3 tbsp Ground cinnamon
  • 2.5 tsp Ground cloves
  • 1.5 tsp Ground allspice
  • 1.5 tsp Ground ginger
  • 1 tsp Ground star anise 2-3 pieces ground
  • ½ tsp Ground nutmeg
  • ½ tsp Ground cardamon
  • ½ tsp Ground coriander
  • ½ tsp Ground mace

Instructions

  • Chop the star anise and any other whole spices with the mini chopper or food processor until finely ground.
  • Thoroughly mix all of the ingredients together.
  • Store the completed pfeffernusse spice blend in a closed jar or plastic bag. It will last for at least a year.
  • This batch makes for at least 6 tbsp of fall spice which is enough to make 6 batches of scones. The pepper is added when making the scones.
