What flour is best for scones?

All of my recipes use King Arthur unbleached all-purpose flour. Its hard winter wheat has enough protein and gluten content to handle fruit and other additions to the scones, and gives the scones their crusty tops and flaky, buttery insides. You can substitute 1/2 cup of bread flour and 1 cup of all-purpose flour from other brands for a similar texture. Unbleached flour gives the scones a darker color. For a whiter scone, use unbleached flour.

Can I freeze the dough?

Absolutely. You can make and cut the dough ahead of time and freeze it to cook another day. This is great if you need to make more than one batch of scones. Instructions for freezing scone dough.
